Parsnips were popular in many culinary dishes in the early modern period, seen to be more nourishing than turnips or carrots. The vegetable was also commonly made into a wine-like liquor. Parsnips were imagined to be good for settling the stomach and were even believed to be an effective anti-venom to poisonous snake bites!
